Easy Keto Pop Tarts

Ingredients

  • 112 grams coconut flour (about 1 cup)
  • 84 grams granulated sweetener (about 7 tablespoons)
  • 1/4 tsp salt
  • 1/4 tsp xanthan gum or psyllium husk powder for flexibility
  • 3 large room temperature eggs
  • 10 TBS butter, melted and cooled
  • 1 TBS room temperature water
  • 1 tsp vanilla extract
  • 8 TBS keto jam or low-carb filling

Optional Glaze

  • 125 grams powdered sweetener (about 1 cup)
  • 1 TBS milk of choice, room temperature
  • 2 tsp vanilla extract (optional)
  • 1 tsp room temperature water (optional)

Instructions

  • Preheat the oven to 400°F (200°C). Line two large baking sheets with parchment paper and set aside. In a large bowl, sift the dry ingredients together until smooth. Add the eggs, melted butter, and vanilla, stirring until well combined. Add the water a little at a time until a smooth, pliable dough forms.
  • Place a sheet of parchment on a clean work surface and transfer the dough onto it. Roll the dough into a rectangle about 1/4 inch thick. Cut the rectangle into smaller rectangles roughly 3 x 4 inches. Keep the pieces on the parchment while you work to avoid tearing.
  • Spoon about 1 tablespoon of jam or filling onto half of the rectangles, spreading it evenly but leaving a 1/2 inch border around the edges. Use the parchment to help lift a plain rectangle and place it over the filled piece. The dough can be fragile, so handle gently.
  • Press the edges together gently to seal, smoothing the surface. Use the back of a fork to crimp the edges and ensure a good seal. Keep each assembled pop tart on its parchment and transfer the sheet to the prepared baking tray.
  • Bake at 400°F for 10–12 minutes, until the edges are golden. Remove from the oven and let cool on the pan for at least 10 minutes, then transfer to a wire rack. Serve warm or allow to cool completely before glazing.

Optional Glaze

  • Whisk the powdered sweetener and vanilla (if using) in a small bowl. Add the milk a little at a time and stir until you achieve a smooth, spreadable glaze. If needed, add a small amount of water to reach the desired consistency.
  • Spoon and spread the glaze over cooled pop tarts. Add low‑carb sprinkles or other toppings if desired. Let the glaze set for about 30 minutes before serving. These are good warm or at room temperature.

Notes

Brown sugar cinnamon filling: In a small bowl whisk 50 grams (about 1/4 cup) brown sugar sweetener, 1 tsp ground cinnamon and 1/2 tablespoon coconut flour until smooth and lump-free. Add roughly 1/2 tablespoon water slowly until the mixture comes together into a soft, spreadable ball.
