Loaf pan or not?

You can use a loaf pan, but it’s not required. I shape the loaf on a foil-lined baking sheet and tent it with foil for support. Lining the pan makes cleanup easy.

  • Red and green bell peppers: Finely diced for flavor and texture.
  • Yellow onions: Finely diced to blend smoothly into the loaf.
  • Minced garlic: Adds depth of flavor—use minced for a consistent texture.
  • 2 large eggs: Bind and add moisture.
  • Crushed Ritz crackers: Pulse or crush into fine crumbs; they replace breadcrumbs and add buttery flavor.
  • Whole milk: Hydrates the cracker crumbs and keeps the loaf moist.
  • Slightly dried basil: Use slightly dried for a fresher herb note.
  • Dijon mustard: Adds tang; yellow mustard can be used instead.
  • Worcestershire sauce: Boosts umami and balances flavors.
  • Seasonings: Dried parsley, thyme, garlic powder, onion powder, paprika, salt and pepper.
  • For the glaze: Sweet chili sauce, ketchup, and brown sugar.

How to make Ritz Cracker Meatloaf

  1. Preheat oven to 375°F. Line a baking sheet with heavy-duty aluminum foil.
  2. Sauté the diced bell peppers and onions in butter or oil over medium heat until translucent; add garlic near the end and cook until fragrant. Remove from heat to cool slightly.
  3. Make the cracker mixture: place crushed Ritz crackers in a bowl, pour in the milk, and stir. Let sit about 5 minutes until thickened.
  4. In a large bowl combine the ground beef, milk–cracker mixture, sautéed vegetables, eggs, basil, Worcestershire sauce, Dijon mustard, and seasonings. Mix gently by hand—do not overmix.
  5. Shape the mixture into a loaf on the foil-lined sheet pan (or place in a loaf pan) and tent with foil.
  6. Prepare the glaze by mixing ketchup, sweet chili sauce, and brown sugar in a small bowl.
  7. Spread half the glaze over the top of the loaf before baking.
  8. Bake for 60–75 minutes. About halfway through baking, spoon the remaining glaze over the loaf and continue until the internal temperature reaches 165°F.
  9. Remove from oven and let rest at least 10 minutes before slicing.

How to make a leftover meatloaf sandwich

Leftover slices make a fantastic sandwich. Bread choices like ciabatta, French rolls, or hamburger buns work well, but classic white bread is my favorite for a nostalgic thick-slice sandwich. Keep it simple with just meat and bread or add your favorite toppings.

For a hot sandwich: warm a skillet over medium, place a thick slice of meatloaf in the pan, butter the bread, place it butter-side down in the skillet, add cheese to the loaf slice, and cook until the bread is golden and the cheese melts. You can also assemble an open-faced sandwich with mashed potatoes and gravy.

  • Heat butter or oil in a skillet over medium. Add diced bell peppers and onions and sauté until translucent. Add garlic near the end and cook until fragrant, then remove from heat to cool.
  • Combine crushed Ritz crackers and milk in a bowl. Stir and let sit about 5 minutes until the mixture thickens.
  • In a large bowl, add ground beef, the cracker–milk mixture, sautéed vegetables, garlic, eggs, Worcestershire sauce, Dijon, herbs, and seasonings. Gently mix by hand until just combined—do not overmix. Shape into a loaf.

Sweet Chili Sauce

  • Whisk together sweet chili sauce, ketchup, and brown sugar until smooth.
  • Spread half the glaze over the shaped loaf. Wrap foil around the loaf or tent it to hold shape.
  • Bake 30 minutes, then spoon remaining glaze over the loaf and continue baking another 30 minutes or until the internal temperature reaches 165°F.
