Instructions

Preheat oven to 475°F (245°C)

  • Place the naan flatbreads on a large pizza stone or baking sheet. Spread a thin layer of pizza sauce over each flatbread, then top with slices of fresh mozzarella.
  • Arrange the halved cherry tomatoes (or sliced Roma tomatoes) on a separate baking sheet. Drizzle with olive oil and season lightly with salt, garlic powder, and Italian seasoning if using.
  • Roast the tomatoes 10–15 minutes in the preheated oven until they soften and begin to caramelize. Remove them from the oven when done.
  • After the tomatoes are roasted, place the prepared naan pizzas in the oven and bake until the mozzarella is melted and the edges of the naan are lightly browned, about 6–10 minutes depending on your oven.
  • Remove the pizzas from the oven. Top each with the roasted tomatoes and fresh basil leaves. Drizzle with a bit more olive oil if desired, slice, and serve immediately.

Notes

Roasting the tomatoes separately prevents excess juice from making the naan soggy. If you use watery mozzarella, blot any excess moisture after baking with a spoon or paper towel to keep the crust crisp.
