Cheddar Dutch Baby with Bacon and Brussels Sprouts

Ingredients
- 4 slices Jones Dairy Farm dry aged bacon, diced
- 6 Brussels sprouts, ends trimmed, outer leaves removed and thinly sliced
- 1/3 cup grated cheddar cheese
- 2/3 cup 2% milk, room temperature
- 3 eggs, room temperature
- 2/3 cup all purpose flour
- Kosher salt and black pepper
- Pinch smoked paprika
- Pinch garlic powder
- Pinch onion powder
- 1 tablespoon butter
Instructions
- Preheat oven to 450°F.
- Heat a 10-inch cast iron skillet over medium-high heat. Add the diced bacon and cook until crispy. Remove bacon with a slotted spoon and set aside, leaving the rendered bacon grease in the skillet.
- Add the sliced Brussels sprouts to the skillet and sauté 1–2 minutes until just softened and coated in bacon grease. Remove with a slotted spoon and set aside.
- Place the skillet with the remaining bacon grease into the oven to heat.
- Meanwhile, whisk eggs and milk together in a small bowl. In a separate bowl, combine the flour with smoked paprika, garlic powder, onion powder, kosher salt and black pepper. Add the egg and milk mixture to the flour and whisk until smooth and well combined.
- Remove the hot skillet from the oven, add the butter and swirl to coat the bottom and sides.
- Immediately pour the batter into the skillet, sprinkle the grated cheddar evenly over the top, and return the skillet to the oven. Bake about 20 minutes, until the Dutch baby is puffed and golden.
- Remove from the oven and allow the Dutch baby to deflate slightly for a minute or two. Top with the cooked Brussels sprouts and crispy bacon. Serve warm; add a runny egg on top if desired.
