<li><strong>Simmer:</strong> Pour in the vegetable broth and use a spoon to scrape up any browned bits from the bottom of the pot. Add the diced potatoes and rinsed red lentils; stir to combine. Cover with a lid, increase heat to medium-high, and bring to a boil. Once boiling, reduce heat to maintain a simmer with the lid slightly ajar. Cook, stirring occasionally, until the lentils are soft and the potatoes are tender, about 15 minutes.</li>
