Cookie cups have appeared on this blog before and they’re always a hit. If you enjoyed the peanut butter and Nutella-filled cookie cups featured previously, you’ll definitely love these Caramel Hot Fudge Cookie Cups. They combine a sturdy chocolate chip cookie shell with a rich homemade hot fudge and a buttery caramel filling for an indulgent bite-sized dessert.

These caramel hot fudge cookie cups might be my favorite cookie-cup variation so far. The exterior is a thick, chewy chocolate-chip cookie formed inside a muffin tin so it keeps its shape and holds a generous amount of filling. Each cup is filled with a dark, velvety hot fudge sauce and a buttery, slightly firm caramel that won’t run everywhere when you take a bite.

For the caramel I use my tried-and-true caramel filling recipe, which sets nicely and has a rich, sweeter flavour than many traditional caramels. That extra sweetness and texture complements the deep, bittersweet notes of the hot fudge sauce. The hot fudge recipe I use produces a glossy, thick chocolate sauce that pairs perfectly with chocolate chip cookie dough.

For the cookie dough I relied on the same recipe I use for my Oreo-stuffed chocolate chip cookies. That dough is intentionally formulated not to spread and to produce a thicker, chewier cookie once baked. The amount of dough used gives the cups a substantial shell so each bite has a satisfying cookie-to-filling ratio.
The result is soft, chewy, thick cookie cups packed with chocolate chips. I chose milk chocolate chips to contrast with the dark chocolate of the hot fudge, but you can use semi-sweet or dark chips depending on how intense you want the chocolate flavour to be.

These are best enjoyed warm when the hot fudge and caramel are gooey and comforting. If you prefer a firmer center, allow them to cool completely or refrigerate for a couple of hours until the fillings set. Serve as an indulgent dessert or a decadent snack—either way, they’re sure to be a crowd-pleaser.

Ingredients
Cookie Cups
- 1 cup butter, softened (210 g)
- ¾ cup brown sugar (150 g)
- ⅔ cup white sugar (140 g)
- 2 large eggs
- 1 tbsp vanilla extract
- 3 ½ cups all-purpose flour (435 g)
- ¼ tsp salt
- 1 tsp baking soda
- 1 ½ cups chocolate chips (270 g) — milk or your choice
Caramel
- ½ tin condensed milk (200 g)
- 2 tbsp butter (20 g)
- 2 tbsp golden syrup (45 g)
- 2 tbsp brown sugar (30 g)
Hot Fudge Sauce
- 2 tbsp golden syrup (45 g)
- ¾ cup dark chocolate (150 g), chopped or chips
- ¼ cup butter (55 g)
- ¼ cup milk
Instructions
- First make the caramel: place the condensed milk, butter, golden syrup and brown sugar in a saucepan over medium heat. Stir until the butter and sugar dissolve, bring nearly to the boil, then remove from heat and allow to cool while you make the hot fudge.
- Make the hot fudge: combine the golden syrup, dark chocolate, butter and milk in a saucepan over low heat and melt together until smooth. Set aside.
- Preheat the oven to 180°C (350°F) and grease a muffin tin thoroughly.
- Make the cookie dough: with an electric mixer, beat the softened butter until creamy, then add both sugars and cream together until light. Add the eggs one at a time, beating well after each addition, then mix in the vanilla.
- In a separate bowl, whisk together the flour, salt and baking soda. Add the dry mix to the wet ingredients in batches; the dough will be quite stiff. Fold in the chocolate chips.
- Press about two thirds of the cookie dough into the base and up the sides of each muffin cup to form a shell.
- Pour roughly two tablespoons of hot fudge into each shell, then top with a heaped tablespoon of the caramel.
- Flatten the remaining cookie dough and use it to seal the tops of each cookie cup.
- Bake for 12–15 minutes, or until the tops and sides are golden and firm to the touch. Allow the cookie cups to cool in the muffin tin before removing.
Notes
Enjoy warm for a gooey, comforting treat. If you prefer a firmer filling, cool completely and refrigerate for 2–3 hours until the centers solidify. These cookie cups store well in the fridge for a few days; reheat briefly to restore the soft texture of the cookie and the warm filling.
