Hello — it’s Popsicle Week! Billy of Wit and Vinegar is hosting this year’s Popsicle Week, a celebration of frozen treats from a variety of creative bloggers. This is my first time taking part and I couldn’t be more excited. I wanted to make something sweet, refreshing, and a little bit different: not overly indulgent, but not an ultra-healthy kale popsicle either. That’s how these honeydew green tea popsicles came to be.

They’re lightly sweet and packed with antioxidants from brewed green tea, making them a bright, refreshing summer treat. I didn’t plan for them to turn out layered, but without added binders like xanthan gum the juice naturally separated as it froze. That’s perfectly normal — similar to how fresh juice separates if left to sit. The result: the tops taste like honeydew-flavored green tea and the bottoms taste like green tea–flavored honeydew. The contrast is surprisingly pleasant, and the popsicles are visually striking.

On a different note, I’ve been thinking a lot lately about what it means to run a blog. Beyond the recipes, photography, and writing, there’s the question of intention: why do I maintain this space? When I started, this site was a personal project where I shared what felt right on a flexible schedule. Over time it’s become more businesslike, which has changed how I approach content. I find myself wondering, “Will readers like this?” instead of asking, “Do I want to make this? Does this reflect who I am?”

That shift has made me realize I need to remember this is my space — my creative work. In the blogging world it’s easy to get caught up in trends and analytics instead of focusing on genuine expression. Even though Well + Full has professional aspects, I want it to remain authentic. Recipes feel more meaningful when they come from a personal place. When the creator has a connection to what they make, the food carries that personality and the results are better for it.

Honeydew Green Tea Popsicles

These honeydew green tea popsicles are a refreshing and simple summer treat, made with real honeydew and antioxidant-rich green tea.

Ingredients

  • 3 Heaping Cups Cubed Honeydew
  • 1 Cup Brewed Green Tea

Instructions

  • Combine the cubed honeydew and brewed green tea in a blender. Blend until smooth and fully combined.
  • Pour the mixture into popsicle molds and freeze for at least four hours or overnight, until fully solid.
  • To remove the popsicles, briefly run the molds under warm water to loosen them if needed.
  • The honeydew and green tea may separate slightly during freezing — that’s natural and won’t affect flavor.
  • Enjoy!
