The New Year marks the end of the holiday season, but I like to stretch the celebration as long as I can. I keep New Year’s simple: a relaxed evening with good friends and a bottle of champagne. A well-styled charcuterie board is my go-to—festive, effortless, and ideal for mingling. And a charcuterie spread isn’t complete without standout nuts. These three spiced varieties are addictive, easy to prepare, and can be made a few days ahead. I tested each one (and happily ate them all), because nuts are my weakness.

To serve – Present each flavor in its own small bowl so guests can sample each variety, or combine them in a single dish for easy grabbing. They pair beautifully with cocktails and snack boards.
To store – Allow the nuts to cool completely, then store in airtight containers at room temperature for 1–2 weeks. For longer storage, freeze in sealed bags or containers for up to 3 months and thaw at room temperature before serving.

Three Spiced Nuts

Ingredients
Asian sesame almonds
- 1 cup raw almonds
- 2 tbsp dark brown sugar
- 2 tbsp tamari
- 3 tsp toasted sesame oil
- 1 tsp yellow curry powder
- 2 tsp sesame seeds
Rosemary & sea salt Marcona almonds
- 1 cup roasted Marcona almonds
- 2 tbsp olive oil
- 1 ½ tbsp minced fresh rosemary
- ½ tsp garlic powder
- ½ tsp onion powder
- 2 tsp coarse sea salt
Sweet & spicy mixed nuts
- 1 cup mixed raw nuts
- 2 tbsp vegetable oil
- 1 tbsp fresh lemon juice
- 2 tbsp dark brown sugar
- 3 tsp smoked paprika
- 1 tsp cayenne pepper
- 1 ½ tsp kosher salt
Instructions
For the Asian sesame almonds
- Combine all ingredients, spread in a single layer on a baking sheet, and bake at 375°F for 20–25 minutes, stirring every 10 minutes to ensure even toasting.
For the rosemary & sea salt Marcona almonds
- Toss Marcona almonds with olive oil, rosemary, garlic powder, onion powder, and coarse sea salt. Spread on a baking sheet and bake at 375°F for about 15 minutes.
For the sweet & spicy mixed nuts
- Mix all ingredients together, spread the mixture on a baking sheet, and bake at 375°F for 20–25 minutes, stirring every 10 minutes so the coating caramelizes evenly.
