With only 5 main ingredients, you’ll have tender, flavorful slow cooker chicken perfect for tacos, burritos, nachos, quesadillas, or a taco salad for a lighter, low-carb option.
I served mine as a taco salad for a lower-carb choice and everyone loved it.

How to make Simple Crock Pot Taco Chicken
Start by cutting 3 1/2 pounds of boneless, skinless chicken thighs into 1–2 inch pieces. Thighs are more economical than breasts and stay juicier and more flavorful after slow cooking.
Add the chopped chicken to the slow cooker along with a diced onion, 6–8 cloves of minced garlic, two taco seasoning packets, a pinch of kosher salt and black pepper, two tablespoons of chicken base (such as Better Than Bouillon), and 1/4 cup of water.

Stir everything to combine, then cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.

Before serving, shred the chicken right in the slow cooker using two forks. The pieces are already small from cutting, but shredding yields even better texture for tacos and bowls.

Simple Crock Pot Taco Chicken
An easy five-ingredient slow cooker recipe for tender, flavorful chicken tacos—ideal for feeding a crowd or building a taco bar.
Ingredients
- 3 1/2 pounds boneless skinless chicken thighs, cut into 1–2 inch pieces
- 2 taco seasoning packets
- 1 onion, diced
