A simple, soy-free vegan yellow cake that makes one 8-inch pan. Soft, moist, and easy to frost for birthdays or holidays.

Ingredients

Wet:

  • 3/4 cup non-dairy milk
  • 2 heaping Tbsp non-dairy yogurt
  • 1 Tbsp flax seed meal or chia seed meal
  • 1/2 tsp apple cider vinegar
  • 1/4 cup oil
  • 3/4 to 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1/2 cup vegan powdered sugar or other sugar (1/3 cup for less sweet)
  • a generous pinch of turmeric for color (optional)

Dry:

  • 1 1/2 cup unbleached white flour (1.25 cups if using a mix of whole wheat and all-purpose)
  • 2 tbsp cornstarch or other starch
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1/4 tsp baking soda

Instructions

  • Preheat the oven to 350°F (180°C).
  • In a bowl, whisk together all wet ingredients until smooth and combined.
  • In another bowl, combine the dry ingredients, or sift them directly into the wet ingredients.
  • Whisk until the batter is smooth and silky, about 1–2 minutes.
  • Pour the batter into a parchment-lined or greased and floured 8-inch cake pan.
  • Bake for about 30 minutes, or until a toothpick inserted into the center comes out clean. Cool completely (cover with a towel to retain moisture), then frost with your favorite frosting, slice, and serve.
