Doritos Casserole Ingredients

This recipe uses simple ingredients you likely have on hand. Full quantities are listed in the recipe card below.

  • Lean ground beef — lean is best to minimize draining
  • Taco seasoning — homemade or a store packet
  • Cheese — shredded cheddar, Monterey Jack or a Mexican blend
  • Sour cream — adds creaminess without canned soup
  • Salsa — thick, chunky salsa (hot or mild) so it doesn’t thin the casserole
  • Doritos — Nacho Cheese or your favorite flavor, crushed (about 4 cups)
  • Water — or beef broth for extra flavor
  • Jalapeño — optional, finely chopped; canned Rotel or green chiles work too

How to Make Dorito Casserole with Ground Beef

Begin by preheating your oven to 375°F. Brown the ground beef in a large skillet over medium-high heat along with the chopped jalapeño if using. Drain excess grease if necessary.

Add the taco seasoning and water or broth, then simmer until most of the liquid is absorbed. Turn off the heat and stir in the sour cream and salsa until the mixture is well blended.

Lightly grease a medium casserole dish, then spread a layer of crushed Doritos across the bottom. Spoon the beef mixture over the chips, then sprinkle with shredded cheese.

Bake for 15–20 minutes, until the casserole is hot and bubbly and the cheese is melted. Add more crushed Doritos on top and return to the oven for a few minutes, or serve immediately with your favorite taco toppings.

Top the casserole with extra shredded cheese, chopped lettuce, fresh tomatoes and a dollop of sour cream. Other great toppings include guacamole, pico de gallo or additional salsa. Serve with a simple side salad or warmed beans for a complete meal.

How to Store and Reheat Leftovers

Store leftover casserole covered in the refrigerator for 3–4 days in an airtight container. For longer storage, freeze in a freezer-safe container. Reheat portions in the microwave until heated through, or warm in a 350°F oven. The chips soften after sitting, which gives a texture similar to enchiladas and many people enjoy it even more the next day.

Recipe Substitutions and Variations

You can layer chips, meat, cheese and salsa as you prefer, but mixing the salsa into the meat keeps assembly quick and tidy. For more substance add black beans, pinto beans or corn to the meat while cooking.

If you prefer a creamier base, swap or combine sour cream with cream of mushroom or cream of chicken soup. Cream cheese can be used but may not blend as smoothly as sour cream.

Recipe Tips

  • Use lean ground beef to reduce excess grease and avoid draining when possible.
  • Substitute beef broth for water to boost flavor.
  • Crush Doritos into small pieces but avoid pulverizing them; very fine crumbs can turn mushy when baked.

Doritos Casserole Recipe with Ground Beef

By: Dee
Prep Time: 15 minutes | Cook Time: 20 minutes | Total Time: 35 minutes | Servings: 8

Ingredients

  • 1 ½ pounds lean ground beef
  • 1 jalapeño pepper, finely chopped (optional)
  • 2–3 tablespoons taco seasoning (or 1 packet)
  • ½ cup water or beef broth
  • ½ cup sour cream
  • 1 cup chunky salsa
  • About 4 cups crushed Doritos tortilla chips
  • 3 cups shredded cheddar or Mexican blend cheese

Instructions

  1. Preheat oven to 375°F.
  2. Brown the ground beef and jalapeño in a large skillet over medium-high heat until no longer pink.
  3. Drain grease if necessary, add taco seasoning and water, and simmer until most liquid is absorbed.
  4. Turn off heat and stir in sour cream and salsa until blended.
  5. Spray a medium casserole dish with nonstick spray and cover the bottom with crushed Doritos.
  6. Layer the beef mixture over the chips and sprinkle the shredded cheese on top.
  7. Bake 15–20 minutes, until bubbly and cheese is melted.
  8. Top with remaining crushed Doritos and return to the oven for about 5 minutes.
  9. Serve with your favorite taco toppings.

Notes

  • Any Doritos flavor works; I used nacho cheese.
  • If sour cream isn’t available, a cream soup can be substituted.
  • Don’t crush the chips too finely or they will become mushy when cooked.
  • You can repeat layers in a larger dish, but a single meat-and-cheese layer is easiest.
