Hummus with Fresh Bruschetta (Shortcut)
Yields: 4 servings (about 2 pieces of bread per serving)

Ingredients
- 2 cups grape or cherry tomatoes (or a combination), halved if large; leave small ones whole
- 1/2 to 3/4 cup prepared hummus
- 1/4 to 1/2 small red onion, finely chopped
- 3 tablespoons extra virgin olive oil
- 1 1/2 tablespoons good-quality balsamic vinegar
- 2 cubes frozen crushed garlic (Dorot) or 2 fresh garlic cloves, crushed
- 2 cubes frozen crushed basil (Dorot) or about 1/4 cup fresh basil, minced; add more to taste
- 1/2 teaspoon sea or kosher salt (adjust to taste)
- 1/2 teaspoon ground black pepper (adjust to taste)
- 2 to 3 tablespoons fresh parsley, chopped, for garnish

These sweet tomatoes are perfect in this recipe.

Directions
- Remove the frozen garlic and basil cubes from their wrapper and microwave on a low setting for 10–15 seconds just to soften them. Set aside.
- Place the tomatoes in a serving bowl.
- Add the finely chopped red onion, olive oil, balsamic vinegar, salt, pepper, and chopped parsley. Add the softened garlic and basil, then toss gently to combine. Taste and adjust seasoning if needed.
- Toast slices of crusty bread. Spread each slice with hummus, then spoon the fresh bruschetta mixture on top. Serve immediately to enjoy the contrast of warm, crunchy bread, smooth hummus, and fresh tomato topping.
This bruschetta is also delicious served over chicken or fish, or alongside grilled vegetables. Store any leftover bruschetta in the refrigerator for up to two days.
