Ingredients

  • 2 ½ tbsp extra-virgin olive oil
  • 1 white onion
  • 550 g raw beetroots
  • 3 cloves garlic
  • ½ tsp salt
  • 600 ml vegetable stock
  • Fresh dill, to garnish
  • Sunflower seeds, to garnish
  • Bread/toast, to serve

Instructions

  • Preheat the oven to 180°C. Peel and quarter the beetroots, dice the onion and crush the garlic.
