I’ve been using Bisquick a lot lately after borrowing a Bisquick cookbook from the library to see whether it was worth buying. With baseball season in full swing, I need fast, simple, tasty meals that travel well to the ballfield—so we don’t end up relying on the snack shack hot dogs every night. Nothing against hot dogs, but those boiled ones aren’t exactly memorable.
So far the cookbook has been a hit. Every recipe I’ve tried has turned out well and my boys have loved them all. What I appreciate most is how quick and straightforward the recipes are, and that most of the ingredients are already in my pantry, so I don’t have to run to the store every time.
This Easy Burrito Bake was a family favorite. I recommend serving it with extra salsa and sour cream, and next time I plan to top it with cilantro and avocado. It would also be delicious with added ground beef or shredded chicken for a heartier version.

- 2 cups Bisquick mix
- 1/2 cup cold water
- 1 can (16 oz) refried beans
- 2 cups cooked rice
- 1 cup chunky-style salsa
- 2 cups shredded Cheddar cheese (8 oz)
- 2 cups shredded lettuce
- 1 cup chopped tomato
- 1/4 cup sliced ripe olives
- Additional salsa (if desired)
- Sour cream (if desired)
Instructions
- Heat oven to 375°F. Spray a 13×9-inch pan with cooking spray.
- In a medium bowl, stir Bisquick mix and cold water until a soft dough forms. Press the dough evenly into the bottom of the prepared pan. (Keeping your fingertips slightly wet makes spreading the dough easier.)
- Spread the refried beans over the crust. In a small bowl, mix the cooked rice with 1/2 cup of the salsa, then spread the rice mixture evenly over the beans. Sprinkle the shredded Cheddar cheese on top.
- Bake 25 to 30 minutes, or until the cheese is melted and the crust is golden brown. Remove from the oven and top with shredded lettuce, chopped tomato, and sliced olives. Serve with additional salsa and sour cream.
Notes
The dough can be a little difficult to spread. To make it easier, keep your fingertips slightly wet while pressing the dough into the pan.
