- 1 tbsp maple syrup
- 1/2 tbsp coconut sugar

How to Caramelize Fruit in the Air Fryer
I’ve caramelized fruit on skillets, grills, and in the oven, and the air fryer is the quickest, easiest way to get even, tender, juicy, caramelized fruit without added fat.
It’s just four simple steps: halve the fruit, brush with maple syrup, sprinkle with coconut sugar (and spices if using), then air fry.
If you skip the coconut sugar the result will still be sweet and soft, but the added sugar helps produce a deeper, more roasted caramel flavor. This method also works well with other fruits like bananas and pineapple—adjust time for ripeness and thickness.

Ingredients
- 2–3 stone fruits (peaches, nectarines, plums, or apricots), halved and pitted
- 1 tbsp maple syrup
- 1/2 tbsp coconut sugar
- 1/4 tsp cinnamon (optional)

Instructions
- Prepare the air fryer: Cut a piece of parchment paper to fit the basket floor and place it inside.
- Prepare the fruit: Halve each stone fruit and remove the pit. Brush the cut sides with maple syrup and sprinkle with coconut sugar. Add a pinch of cinnamon and salt if using.
- Air fry: Place the fruit cut-side up in the basket and air fry at 350°F (175°C) for about 8–15 minutes, until the fruit is soft and caramelized. Start checking at 8 minutes and adjust time based on fruit type and your air fryer.

Air fryer times vary by model and fruit ripeness. Peaches and nectarines generally need 12–15 minutes; plums and apricots often finish in 5–8 minutes. Begin at 8 minutes and increase time until you reach your preferred level of caramelization.
