These taquitos are a great example of a breakfast you can prepare ahead and freeze for busy mornings.

What Is a Taquito?

A taquito — literally “little taco” — is a small tortilla wrapped around a filling such as meat, cheese or chicken, traditionally fried until crisp. Taquitos are often made with corn tortillas, while a similar dish called flautas usually uses flour tortillas.

Baked, Not Deep-Fried

While deep-fried taquitos are undeniably tasty, baking them keeps this version lighter and less greasy. In the oven they turn golden and crisp without excess oil, especially when using lean chicken sausage.

These taquitos are excellent for batch cooking. Bake a large tray, cool completely, then freeze individual portions. Reheat in the microwave or oven for a quick, wholesome breakfast on hectic mornings.

Baked Breakfast Taquitos with Salsa Dip

Breakfast Taquitos

Corn tortillas filled with sausage, scrambled egg, cheese and spinach, then baked. Make ahead and freeze for quick breakfasts.

Ingredients

  • 375 gram Lilydale® Breakfast Chicken Sausage 1 package
  • 5 eggs large
  • 1 cup cheddar cheese grated
  • ½ cup spinach leaves chopped
  • 10 corn tortillas
  • salt & pepper, to taste
  • cooking spray or olive oil

Instructions

  • Preheat oven to 375°F (190°C).
  • Place sausages on a parchment-lined baking sheet.
  • Bake sausages for 20 minutes, turning halfway through.
  • While sausages cook, whisk the eggs and scramble them over medium heat.
  • Once sausages are cooked, slice them.
  • Warm tortillas: place them on a plate, cover with a damp paper towel, and microwave about 1 minute until pliable.
  • Assemble taquitos by dividing the eggs, cheese, sausage and spinach among the tortillas.
  • Season with salt and pepper.
  • Roll each tortilla around the filling and place seam-side down on a parchment-lined baking sheet.
  • Lightly brush with olive oil or spray with cooking spray to prevent cracking.
  • Bake until golden, about 12–15 minutes. Serve with salsa and/or guacamole.

Notes

If using flour tortillas, choose small fajita-sized ones.

When working with corn tortillas, roll quickly and get them into the oven so they don’t dry out.

To freeze: after baking, cool completely, pack into freezer bags and store in the freezer. Reheat in the microwave or bake on a sheet for about 20 minutes until heated through.
