Ingredients

For the Balls

  • 1
    cup
    large flake oats
  • 1
    cup
    toasted raw almonds
  • 1/3
    cup
    cocoa or cacao powder
  • 1
    cup
    shredded coconut
  • 1
    teaspoon
    almond extract
  • 1
    teaspoon
    vanilla
  • 1
    cup
    pitted dates (Medjool recommended)
  • 1
    tablespoon
    maple syrup
  • 1/4
    cup
    coconut milk
    (canned works well)

For the Coating (optional)

  • 1/4
    cup
    coconut milk
  • 1/2
    cup
    shredded coconut

Instructions

For the energy balls

  1. Place all ingredients except the additional coconut milk in a food processor. Process until smooth and the mixture begins to clump, about 2 minutes. With the processor running, add the remaining coconut milk in a slow stream until the mixture holds together when pressed. You may not need all of the coconut milk.

For the coating

  1. Pour 1/2 cup shredded coconut and 1/4 cup coconut milk into separate shallow bowls and set aside.

  2. Scoop about 1 tablespoon of mixture and roll it between your palms to form a ball. Dip each ball into the coconut milk so the shredded coconut will stick, then roll in the shredded coconut to coat. Repeat until all the mixture is used.
