Instructions
For the energy balls

Place all ingredients except the additional coconut milk in a food processor. Process until smooth and the mixture begins to clump, about 2 minutes. With the processor running, add the remaining coconut milk in a slow stream until the mixture holds together when pressed. You may not need all of the coconut milk.
For the coating

Pour 1/2 cup shredded coconut and 1/4 cup coconut milk into separate shallow bowls and set aside.

Scoop about 1 tablespoon of mixture and roll it between your palms to form a ball. Dip each ball into the coconut milk so the shredded coconut will stick, then roll in the shredded coconut to coat. Repeat until all the mixture is used.
