As the barley cooks slowly and the beef braises, the grains become tender but still pleasantly chewy, and the beef breaks down into meltingly soft pieces. The liquid reduces into a flavorful gravy—simple, satisfying, and perfect for cool evenings.

What you’ll need…

  • Beef stock – Use a good-quality stock or broth. Homemade stock adds extra depth.
  • Onion – Chopped. White, yellow, or sweet onions all work.
  • Whole-grain barley – Use hulled or hull-less barley for a nutty flavor and chewy texture. Avoid quick-cooking pearled barley for this slow method.
  • Water – Filtered or bottled water is best if your tap water is heavily chlorinated.
  • Celery – Sliced.
  • Salt & freshly ground black pepper
  • Fresh garlic – Minced. A garlic press or fine grater helps avoid large chunks.
  • Fresh thyme sprigs – Use whole sprigs so you can remove them before serving; they give a bright herbal note.
  • Bay leaves – Add subtle herbal and floral notes that enhance the stew.
  • Tomato paste – Adds concentrated umami, a touch of sweetness, and acidity to balance the dish.
  • Olive oil – Extra-virgin is preferred for flavor; use a neutral oil if you prefer. Reserve oil for browning the beef.
  • Chuck beef – Cut into large, bite-sized cubes. Chuck becomes tender and flavorful when cooked slowly.
  • Carrots – Fresh, cut into 1-inch pieces. If the ends are wide, halve them so pieces cook evenly.
  • Fresh flat-leaf parsley – Chopped, for garnish. Fresh herbs brighten the finished stew.

If you expect a busy morning, you can prep everything the night before. Assemble the measured ingredients in the slow cooker insert, cover, and refrigerate—then pop the cooker on in the morning and go about your day.

  • Combine beef stock, chopped onion, whole-grain barley, and water in the bowl of a 6-quart slow cooker.
  • Add sliced celery, minced garlic, kosher salt, and freshly ground black pepper.
  • Nestle in whole thyme sprigs and bay leaves.
  • Dollop the tomato paste on top and give everything a gentle stir to combine.

Brown the beef before adding it

  • Scatter the carrot pieces over the beef in the slow cooker.

A quick note on barley: use hulled or hull-less whole-grain barley, not quick-cooking pearled barley. The latter will become mushy during the long cook. Whole-grain barley keeps a pleasant chew and adds a nutty flavor to the stew.

  • Cover and cook on LOW until the meat is tender and the barley is cooked, about 8 hours.
  • Remove and discard the thyme sprigs and bay leaves.
  • Ladle the stew into bowls and garnish with fresh thyme leaves and/or chopped parsley.

This stew is hearty on its own, thanks to the barley, but you can customize it easily: add cubed cooked potatoes, cooked peas, green beans, or sautéed mushrooms to suit your family’s tastes. Leftover roasted or baked potatoes also make a welcome addition.
