Spring has me outside in the yard, hands in the soil and head full of plans. The trees are in and now I tend them nightly, careful with watering and rooting hopes: grow trees!

Cucumber Southside Cocktail

Ingredients

  • 1.5 ounces Hendrick’s Gin
  • 0.75 ounce lemon juice, fresh
  • 0.75 ounce simple syrup
  • 3 cucumber wheels
  • 5–6 fresh mint leaves

For Garnish

  • 1 cucumber wheel
  • 1 mint sprig

Instructions

  1. Muddle the cucumber wheels and mint with the lemon juice and simple syrup in a cocktail shaker to release the flavors.
  2. Add Hendrick’s Gin and ice, and shake vigorously until well chilled.
  3. Strain into a chilled coupe or martini glass.
  4. Garnish with a cucumber wheel and a sprig of mint. Serve immediately.
