Enjoy a taste of the tropics with a homemade frozen piña colada — a refreshing blend of crushed ice, pineapple, coconut cream and rum.
With Mother’s Day approaching, today’s Sunday Supper theme celebrates “Mom’s Favorite Recipes.” My mother isn’t someone who spends hours in the kitchen—she’s not into baking and only occasionally cooks. People often ask where my passion for cooking and baking came from, and I honestly don’t have a clear answer.
One thing my mom does enjoy is mixing cocktails, especially those with tropical flair. She jokes that she was born in the wrong place — she adores steel drum music, vivid Caribbean colors and bright, island flavors. For her favorite recipe, a frozen piña colada seemed perfect.

The drink is easy to prepare once you have the ingredients. Both fresh and frozen pineapple are widely available; pineapple juice is usually found in the juice aisle. Coconut cream can often be found in the international or baking aisle. Use good-quality ingredients for the best flavor.
For the coldest, most enjoyable drink, chill your glasses in the freezer before serving. Wrapping a napkin around the glass will make it more comfortable to hold. Add a paper umbrella or a faux lei for a playful tropical touch.

Frozen Pina Colada

Ingredients
- 1 cup crushed ice
- ½ cup diced pineapple, frozen
- ¼ cup pineapple juice
- ¼ cup coconut cream
- 6 tablespoons white rum
- Sliced pineapple, for garnish
Instructions
- Place two cocktail glasses (stemless wine glasses or hurricane glasses) in the freezer to chill.
- Combine the crushed ice, frozen pineapple, pineapple juice, coconut cream and white rum in a blender. Blend on high until smooth.
- Pour into the chilled glasses, garnish with pineapple slices and serve immediately.
