I love having a big jar of Kaw-Cajun Comeback sauce on hand — recipe courtesy of Chez John. I smear it on everything, including this simple and satisfying chicken nugget po’boy. Spicy, crunchy, and ready in minutes, it’s a great lunch that delivers big flavor without fuss.

It’s OK to Use Frozen Nuggets
I found a bag of frozen chicken nuggets in the freezer — a coupon purchase and a bit of laziness led to an easy solution: a po’boy. While I sometimes make nuggets from scratch, frozen ones work perfectly here. Cook them according to package directions, pile them into a split baguette, add the Comeback sauce, lettuce and tomato, and you have a tasty sandwich in minutes. Nothing fancy, just mighty good.
Also try my Oh Boy po’boy for another quick, flavorful sandwich option.
