This Sticky Lemon Slice is a tangy yet sweet treat made from a simple shortbread-like base topped with a glossy lemon filling. The topping bakes to an almost custard-like texture that melts in the mouth.

I’ve made this slice many times over the years and it’s one of my mother’s favourites. It never lasts long at home. Quick and easy to prepare, it’s ideal for packed lunches, afternoon snacks, or family gatherings.

One of the best things about this recipe is how easily it comes together in a food processor: blend the base ingredients until they form a dough, then while the base bakes, blend the topping ingredients. No processor? You can make it with a hand mixer or by hand with the same results.

Ingredients
- 120 g Butter, softened (½ cup)
- 1 Cup All-purpose flour
- ½ Cup Icing sugar
- 2 Tbsp. Milk
- ¾ Cup Caster sugar
- ½ Cup Lemon juice (about 3 lemons)
- 1 Tbsp. Lemon rind (zest)
- 3 Large Eggs
- 2 Tbsp. Custard powder
- ½ teaspoon Baking powder
Instructions
- Preheat the oven to 180°C (350°F) and grease a 9″x13″ (23×33 cm) baking tin.
- For the base, place the butter, flour and icing sugar in a food processor and process until a light dough forms.
- Add the milk, starting with 1 teaspoon. Add slowly — you may only need a little. The dough is ready when it forms a ball around the blade.
- Press the dough evenly into the base of the prepared tin and bake for about 15 minutes, or until the edges just begin to brown.
- While the base bakes, make the lemon topping.
- Place the lemon juice, lemon rind, eggs, baking powder, caster sugar and custard powder in a food processor and blend until well combined.
- Pour the lemon mixture over the pre-baked base and return to the oven for 20–25 minutes.
- The top should be lightly browned and the centre set when done.
- Allow the slice to cool completely before slicing. For cleaner slices, chill in the fridge for an hour before cutting.
Notes
Chilling the slice for an hour before slicing helps produce neat, even pieces.
