Recipe Ingredients

Below are the ingredients with notes and simple substitutions.

A tray of golden French fries with bowls of truffle oil, parsley, Parmesan, and salt & pepper.

Truffle oil: Use the best quality you can find. White truffle oil was used here, but black truffle oil is fine. Fresh shaved truffle is a luxe option if available.

French fries: Frozen fries are convenient and crisp up reliably. You can also use homemade fries made from Russet potatoes.

Parmesan: Freshly grated Parmesan adds a nutty, salty finish. Pecorino Romano can be substituted.

Seasonings: Kosher salt and freshly ground black pepper to taste.

Parsley: Finely chopped fresh parsley for garnish and brightness.

The full ingredient quantities are in the recipe card below.

Tips and Substitutions

  • Use truffle salt: Replace kosher salt with truffle salt to boost the umami.
  • Try toppings: Add chopped herbs like parsley, rosemary, or thyme. Toss with a spoonful of garlic confit or a little freshly grated garlic for extra depth.
  • For Parmesan: Pecorino Romano is an easy swap for Parmesan.
  • Reheating: Re-crisp leftover fries in an air fryer or a preheated oven for a few minutes to restore texture.

Serving Recommendations

Parmesan Truffle Fries are easy to serve and pair well with many dishes. Here are a few ideas:

  • Dips: Serve with horseradish cream, garlic aioli, basil mayo, or chipotle mayo for dipping.
  • As appetizers: Pair with wings or other small plates for a game-day spread.
  • With mains: These fries complement burgers, fried chicken sandwiches, or steak frites for a complete meal.

Parmesan Truffle Fries FAQs

Can I use truffle oil to deep fry the French fries?

No — high heat destroys the aroma of truffle oil. Reserve truffle oil as a finishing touch rather than a cooking oil.

What does truffle oil taste like?

Truffle oil tastes earthy and mushroom-like, adding pronounced umami that pairs well with salty, savory foods.

What are truffles?

Truffles are rare subterranean fungi with a strong, distinctive aroma. Truffle oil provides a more affordable way to add their flavor to dishes.

Ingredients

  • 1 bag about 1 pound of frozen french fries, or homemade french fries
  • 2 tablespoons white truffle oil
  • 1/4 cup grated parmesan cheese, plus more for serving
  • Kosher salt and freshly ground black pepper
  • 1 tablespoon finely chopped parsley

Instructions

  • For Frozen Fries: Preheat oven or air fryer to 400°F. Spread frozen fries on a parchment-lined baking sheet and bake until crispy and golden, about 25–30 minutes in the oven or 15–20 minutes in the air fryer, flipping halfway.

  • For Parmesan: Pecorino Romano works well as a substitute.
  • Reheating: Re-crisp leftover fries in an air fryer or oven for best results.
