You can learn a lot about someone from the bumper stickers on their car.

Some people broadcast their political views, religion, favorite sports teams, travel destinations, or even personal preferences. I tend to keep my opinions to myself, but if my car wore a sticker it would probably say something food-related—like “Kiss the Cook,” “I Love Food,” or “I’m Only Speeding Because I’m Really Hungry.”
Food occupies most of my waking thoughts, and occasionally inspiration strikes in the middle of the night. This recipe grew out of one of those late-night moments.

This frosting has a smooth, spreadable texture that made it perfect for letting my daughters have fun spreading and sprinkling. They loved the flavor, and by using xylitol as the sweetener there are effectively zero grams of sugar in the whole recipe.
You can tint the frosting naturally: use beet or pomegranate juice for pink/red, chlorophyll for green, or blueberry juice for blue/purple shades.
I was hesitant about xylitol at first, but after researching it I feel comfortable using small amounts. I choose xylitol made from birch to avoid potential GMOs associated with some corn-derived versions. If you prefer to avoid xylitol entirely, substitute another natural granulated sweetener to suit your needs.
This frosting is low fat, low carb, sugar-free, and low in Weight Watchers points—simple, versatile, and delicious.

Ingredients
- 1 cup cannellini beans
- 4 Tablespoons xylitol measured then ground into a powder
- 1 teaspoon vanilla
- pinch sea salt
- 1 Tablespoon oil I use grapeseed
Instructions

Process all ingredients until the mixture is smooth and well combined.

Transfer the frosting to the refrigerator and chill for about 30 minutes to set.

Use as desired on cookies, cupcakes, or other treats.
