A simple, soy-free vegan yellow cake that makes one 8-inch pan. Soft, moist, and easy to frost for birthdays or holidays.
Ingredients
Wet:
- 3/4 cup non-dairy milk
- 2 heaping Tbsp non-dairy yogurt
- 1 Tbsp flax seed meal or chia seed meal
- 1/2 tsp apple cider vinegar
- 1/4 cup oil
- 3/4 to 1 tsp vanilla extract
- 1/4 tsp almond extract
- 1/2 cup vegan powdered sugar or other sugar (1/3 cup for less sweet)
- a generous pinch of turmeric for color (optional)
Dry:
- 1 1/2 cup unbleached white flour (1.25 cups if using a mix of whole wheat and all-purpose)
- 2 tbsp cornstarch or other starch
- 1/4 tsp salt
- 1 tsp baking powder
- 1/4 tsp baking soda
Instructions

Preheat the oven to 350°F (180°C).

In a bowl, whisk together all wet ingredients until smooth and combined.

In another bowl, combine the dry ingredients, or sift them directly into the wet ingredients.

Whisk until the batter is smooth and silky, about 1–2 minutes.

Pour the batter into a parchment-lined or greased and floured 8-inch cake pan.

Bake for about 30 minutes, or until a toothpick inserted into the center comes out clean. Cool completely (cover with a towel to retain moisture), then frost with your favorite frosting, slice, and serve.
